Rafferty's Blueberry, Banana & Apple Buckwheat Pancakes

These pancakes offer a great gluten-free breakfast or dessert and the buckwheat flour provides a great source of fibre for your baby.
  • Ingredients

    Makes - 10 mini pancakes

    Pancake Batter

    1 cup of buckwheat flour

    1/4 tsp. baking powder

    1 cup milk (dairy alternative e.g. coconut or almond)

    1/2 tsp. vanilla extract

    1tsp cinnamon, ground

    1 pouch of Rafferty Blueberry Banana and Apple Puree

    1 tbsp. butter, for cooking

    Topping

    1/2 cup natural yoghurt

    1 punnet of strawberries, cut into quarters

    Age:

    Suitable for babies aged 10 months +

    Age variation tip:

    you can make mini muffins for better portioning

    Variation tip:

    Try using other berries or pear

    Storage tip:

    Always store in an airtight container. Fridge – 1 week Freezer - up to 2 months.

    Step 1
    Combine flour and baking powder in a bowl and mix well
    Step 2
    Add the Rafferty Blueberry Banana and Apple Puree, and milk. Mix into a batter consistency
    Step 3
    Melt butter or coconut oil over medium heat, spoon batter in pan and flip pancakes once one side is cooked
    Step 4
    Top pancakes with yoghurt and strawberries
